Well there are a few responses to that which depend on what you mean by UX. It is a rather broad term. If you are looking for design principles then I would point you to Mayer's Principles of Multimedia Learning. That focuses mainly on presentation of content. Once you start to think about what experience are going to be best for learning, then you start to dip into Learning Science. A few of my favorites that are easy reads include Make it Stick, Small Teaching, and Powerful Teaching. In my opinion design and teaching strategy are tied to the hip. You can't create a good learning experience if you are not paying attention to both of them.
